Rocky Road

Prep Time: 10mins   Cook Time:  10mins   Makes: 12

Ingredients  

  • 250g Digestive Biscuits  

  • 150g Milk Chocolate

  • 150g Dark Chocolate

  • 100g Butter

  • 150g Golden Syrup

  • 100g Raisins

  • 50g Mini Marshmallows

 

Method

  • Line a 20cm square-shaped tin with baking parchment.

  • Crush the biscuits in a plastic bag using a rolling pin.

  • Melt the milk chocolate, dark chocolate, butter and golden syrup in a glass bowl over a pan of simmering water until everything is melted and has combined.

  • Take the bowl off the heat and add the raisins, marshmallows and crushed biscuits.

  • Spoon the mixture into the tin and press it in and level it out with a spoon.

  • Place this in the fridge for 1 hour or until solid.

  • Cut into squares to serve.
