Mini Key Lime Pies

Ingredients

  • 300g Sweetened Condensed Milk 

  • 100g Cream Cheese 

  • 80ml Cream

  • Juice of 3 Limes 

  • 150g Digestive Biscuits (approx. 10 biscuits)

  • 60g Melted Butter 

 

Method

  • In a large bowl, whisk together the sweetened condensed milk, cream cheese and cream until smooth. Add the juice of 3 limes and whisk again.

  • In a plastic bag, crush the digestive biscuits with a rolling pin. Pour them into a bowl and add the melted butter and stir to combine.

  • Evenly distribute the biscuit mixture in a cupcake tin.

  • Add the lime mixture on top of the biscuit base and freeze for an hour or until solid.
