Mini Key Lime Pies

Ingredients

300g Sweetened Condensed Milk

100g Cream Cheese
-
80ml Cream
-
Juice of 3 Limes
-
150g Digestive Biscuits (approx. 10 biscuits)

60g Melted Butter

Method

In a large bowl, whisk together the sweetened condensed milk, cream cheese and cream until smooth. Add the juice of 3 limes and whisk again.

In a plastic bag, crush the digestive biscuits with a rolling pin. Pour them into a bowl and add the melted butter and stir to combine.

Evenly distribute the biscuit mixture in a cupcake tin.

Add the lime mixture on top of the biscuit base and freeze for an hour or until solid.
