Leek and Potato Soup

Prep Time: 5mins    Cook Time: 25mins   Serves: 6

Ingredients

  • 50g Butter    

  • 3 Leeks (chopped)

  • 1 Onion (chopped)     

  • 1L Vegetable Stock

  • 4 Potatoes (600g, cubed)  

 

Method

  • Wash leeks then cut off most of the leafy dark green part. Chop the remainder of the
    leek and fry this in a large pot with the butter and chopped onion until everything has reduced in size and is soft to the touch.

  • Peel and chop the potatoes into cubes. Then add the Stock into the leeks and simmer until potatoes are soft.

  • Blend with hand blender until smooth.

  • Add salt, pepper and cream to taste.
