Leek and Potato Soup

Ingredients

50g Butter

3 Leeks (chopped)

1 Onion (chopped)

1L Vegetable Stock

4 Potatoes (600g, cubed)
Method

Wash leeks then cut off most of the leafy dark green part. Chop the remainder of the
leek and fry this in a large pot with the butter and chopped onion until everything has reduced in size and is soft to the touch. -
Peel and chop the potatoes into cubes. Then add the Stock into the leeks and simmer until potatoes are soft.

Blend with hand blender until smooth.

Add salt, pepper and cream to taste.
